Milk Tart with Cinnamon



Milk Tart

Milk Tart is my favourite dessert.  It's crunchy, biscuity base goes so well with the soft, creamy filling.  I can never get enough! I strongly recommend trying this out.

Ingredients 
- 500ml milk
- 100g sugar
- 30ml plain flour
- 2 eggs
- 40g butter
- 2ml salt
- 30ml cornflour
- 5ml vanilla essence
-  Large pastry dish
- Cinnamon

Method
1)  Measure out milk, sugar, butter and salt into a medium-sized pot.  Set aside.
2)  In a small bowl, measure out the flour and cornflour.  Gradually add drops of milk until it becomes a thick paste.
3)  In a separate bowl, whisk eggs together.  Add to paste.
4)  Turn stove to medium heat and heat the mixture in the pot.  Bring to a simmer, stirring occasionally.
5)  When simmering, add the mixture from the small bowl. Now QUICKLY stir until the mixture becomes a thick paste- this avoids lumps.
6)  Pour into the pastry dish and leave to cool down for a couple of minutes.
7)  Making sure the mixture is level, cover the whole of the top with cinnamon.  Make sure no white is visible.
8)  Put in the fridge to set.

Definitely try this out! Am certainly going to make this again soon.  5/5

Chocolate Pots

Chocolate Pots

Ingredients

  • 225 g dark chocolate, finely chopped
  • 400 ml double cream, plus extra for serving
  • 150 ml milk
  • 50 g icing sugar
  • 2 egg yolks
  • cocoa powder, to dust 

Method

1. Put the chopped chocolate into a large bowl.  


 
2. Put the cream into a saucepan, bring it gently to the boil, then pour it over the chocolate. Stir together until the chocolate melts and put this mixture to one side.


3. In another bowl, mix together the milk, icing sugar and yolks. 

 4. Pour the egg and milk mixture into the chocolate, stir till combined, then strain through a sieve into a clean bowl.

 

 5. Pour the mixture into small pots.
 6. Put the pots in the fridge and leave overnight.
 7. To serve, remove the pots from the fridge and dust with cocoa.

Clementine Cake

This cake is similar to other fruity/vegetable cakes like carrot and banana, but is still totally different at the same time.  There is a subtle hint of clementine among the moist, soft texture.  Not too strong, not too subtle.  If you like banana cake, I strongly recommend this!

Ingredients
  1. 1 1/2 cups flour 
  2. 1/2 teaspoon baking powder 
  3. 1/4 teaspoon baking soda 
  4. 1/4 teaspoon salt 
  5. 2 eggs, room temperature 
  6. 1 1/4 cups sugar 
  7. 3/4 cup olive oil 
  8. 4 clementines (zest, juice, and pulp)
Method
1) Preheat the oven to 190°C and line a 9" x 5" loaf pan with baking paper.
 2) Zest the clementines into a large bowl, as you will need to add ingredients to this further on.  Try not to get the pith (the white part) in the zest, as this can be bitter.  Then, add the sugar.
3) Peel the remaining skin off the clementines and process them so that they make 1 cup of pulpy juice, put this to one side.
4) Add the eggs and oil into the sugar-zest mixture.  Whisk together to make a light, runny mixture.
5) Add the juice to the mixture.
6) In another bowl, combine the flour, salt, baking powder and baking soda.  Gradually combine this with the wet ingredients.
7) Pour into the loaf pan and cook in the center of the oven for about 50 minutes.

I LOVE this cake! It has a perfect consistency and taste amazing5/5.
